Duration: 20 minutes

Servings: 2 pax

Ingredients

  • 400gr chicken breast

  • 10gr whole wheat flour

  • 2 egg yolks

  • 1 onion

  • 2 - 3 tomatoes

  • 2 - 3 scallions

  • Cooking oil

  • Seasoning powder

  • Ground black pepper

  • Sugar

  • Oyster sauce

Instructions

  1. Prepare the ingredients

Rinse the chicken breast with water, pat dry, and cut into small pieces. Peel and finely chop the onion. Wash and chop the scallions and tomatoes.

Place the chicken breast into a blender and grind until smooth. Mix it with 2 egg yolks, the chopped onion, 1 tablespoon of seasoning powder, 1 teaspoon of ground pepper, and 10gr of whole wheat flour. Shape the mixture into small balls, adjusting the size as you like.

  1. Lightly fry the chicken balls

Heat about 100ml of cooking oil in a pan. Once hot, drop in the chicken balls and fry until golden on all sides. Transfer them to a plate lined with oil absorbing paper to remove excess oil. If you use an air fryer, just spray a thin layer of oil on the chicken balls and air-fry them twice at 180°C for 5 - 7 minutes each.

  1. Simmer with tomato sauce

Add the chopped tomatoes into a pan with 50ml of water, 1 tablespoon of seasoning powder, 1.5 tablespoons of sugar, and 2 tablespoons of oyster sauce. Stir well over medium heat for about 2 minutes, then add in the fried chicken balls. Lower the heat and let them simmer for 5 - 7 minutes so the chicken absorbs all that tangy tomato goodness. Finally, transfer the chicken balls to a plate with the sauce and garnish with chopped scallions.

Tips for serving

Best enjoyed with:

  • Brown rice

  • Brown rice vermicelli with fresh veggies, topped with the sauce

  • Whole wheat sandwich bread
